Strawberry Coconut French Toast Cakes


Because when you look everywhere and don’t have sliced bread, but you do find sweet hamburger buns (I don’t even know how because I don’t buy them), but the craving is for French toast, this happens! On the upside, since they are round they can be called pancakes!

Oh yea, and it’s healthy, simple, satisfying, delicious! This is the most basic recipe for a healthy French toast and the mixture can be used on any bread.

Strawberry Coconut French Toast Cakes

WHAT

  • 4-6 slices of bread of choice
  • 1/4 cup shredded coconut
  • Strawberries for topping
  • 2 tbsp hazelnuts or nut of choice
  • 2 tbsp almond butter
  • 2 tbsp hazelnut spread
  • Maple syrup to taste
  • Butter or cooking spray for pan frying

For the French Toast Mixture

  • 1 egg white, 2 egg whites
  • 1 tbsp ground cinnamon
  • 1 tbsp coconut sugar or honey
  • 1/3 cup milk of choice
  • 1 tsp vanilla extract

HOW

  1. Mix together the ingredients.
  2. Dip your sliced (thawed) bread into the mix.
  3. Heat up a skillet at medium heat with cooking spray or butter as to Pan sear for the bread for about 30sec-1 minute depending on the thickness of your toast/bun.
  4. Sprinkle shredded coconut over bread before flipping over, and do the same to the other side once you flip it over.
  5. Once ready, mix together the almond butter and hazelnut spread (also known as Nutella) and Heat it slightly. Spread in between layers.
  6. Top it off with strawberries, hazelnuts and maple syrup if you so desire. We desired, so we did it!
