Healthy Feijoada “Bean Soup”

Feijoada! Probably the most famous dish in Brazil but notably fat and sinful! It is delicious, incorporated lots of different meats, black beans and fats….MOST Brazilians love it, miss it, but it’s just not a good option for daily consumption. What do you do so it could be? Healthify it.

Here is my take on HEALTHY Feijoada, aka, Black bean soup with lean meats and sausage. I think about it as a Protein Bowl!

What I did:

Healthy “Feijoada” Bean Soup

WHAT

2 cans of black beans (I use Bush’s black beans, 15oz
1/4 cup chopped onions
2 tbsp freshly chopped garlic
1 tbsp EVOO
3 oz sausage of choice (I use linguiça or chorizo), cooked, chopped
3 oz lean fajita meat, cooked
Salt/pepper to taste
Onion and garlic powder to taste

HOW

Serves 4

Sautée onion in a bit of EVOO in medium heat for 1-2 minutes

Add beans and garlic and allow them to simmer.

Prepare sausage and meat (may add more for added protein). Add to beans. Season with salt/pepper/onion and garlic powder.

Allow to simmer for at least30 minutes. The longer the better! Also a great recipe for crock pot or slow cooker. You might need to add a little more water for proper consistency as it should be a “soup” or “soupy”. I enjoy it quite juicy!

Brazilians enjoy this with white rice. I would sub for brown rice.

Enjoy the taste. It is absolutely delicious and eat healthier than the regular feijoada.
