Happy Halloween: Stuffed Pumpkin Muffins

Because t’is the season for PUMPKIN EVERYTHING!!

I just made delicious stuffed pumpkin muffins in one quick step! Literally all you have to do is add everything to your kitchen add, blender or whisk by hand. There is no trick to this one!

  

  
STUFFED PUMPKIN MUFFINS

WHAT

  1. 2 cups whole wheat flour (or any flour)
  2. 2 teaspoons pumpkin pie spice
  3. 1 teaspoon of cinnamon
  4. 1 teaspoon of baking soda
  5. 1 ½ teaspoons salt
  6. ½ cup brown or coconut sugar
  7. ¼ cup honey (optional)
  8. 1 ½ to 2 cups of 100% pure pumpkin puree
  9. 2 large eggs, 1 egg white
  10. ¼ cup vegetable oil
  11. Juice of 1 lemon
  12. ¼ cup milk, I used almond/coconut milk

Optional:

  • 1/2 cup pecan pieces, chopped

Cream Cheese Yogurt Filling:

  1. Combine these ingredients together.
  2. 1/4 cup low fat cream cheese, at room temperature
  3. 1/4 cup low fat Greek yogurt
  4. 1 teaspoon vanilla extract
  5. 1 tablespoon of sweetener+1 tablespoon of confectioner’s sugar.
  • If you like a sweeter filling, add at least 1/4 cup of sugar or 2 more tablespoons of sweetener.
  • You can also use nut butters or hazelnut spread as a filling.

HOW

  • Preheat oven to 350° F.
  • Prepare your muffin pan. I made 24 mini muffins but it will make 12 regular muffins or a full cake.
  • If you’re using the blender, add all ingredients together (except pecans) and blend.
  • If you’re mixing by hand or using a stand mixer, starting with the flour, pumpkin pie spice, cinnamon, baking soda and salt in large bowl.
  • Add sugar, pumpkin, eggs, oil and juice in large mixer bowl and beat until just blended. Add flour mixture to pumpkin mixture and stir just until moistened. Fold in pecans. Spoon batter into prepared muffin cups, filling ¾ full.
  • If you are stuffing the muffins, full ½ full and add dollop of filling in center, covering the top with other ¼ of batter.
  • If you wish, you can also sprinkle chocolate morsels or nuts over the top.
  • Bake for 15-20 minutes or until wooden pick inserted in centers comes out clean. Cool in pans on wire racks for 10 minutes and enjoy immediately. Store the rest in a covered container or resealable plastic bags.
