Eat with your EYES!

A delicious, colorful, and most importantly, SIMPLE dinner you can prepare in under 20 minutes for you and the family. I love the aromatics provided to food by using natural citrus flavors. Orange has a special place in my palate because although most people think of using it as a sweet ingredient, I really enjoy making it savory!

 

I’m a big proponent of preparing food for health and nourishment without sacrificing taste, and as a wearer of contact lenses, my choice is DAILIES TOTAL1® because they are the world’s first and only water gradient contact lens! Today’s recipe is all about eye health and the foods that do your eyes good! I have prepared an orange glazed salmon with asparagus and roasted sweet bell peppers. Salmon is my favorite fish to prepare. In addition to its rich taste, it contains essential fatty acids that do your whole body good and also help with visual development, retinal function, and even protects against dry eye (which I suffer from). Fatty fish like salmon are the best options to load up on essential fatty acids!

 

I prepared mine using an orange infused olive oil, salt, pepper, a splash of lemon juice and orange slices on top. Topping and infusing with oranges also promote eye health due to the wonderful vitamin C, which is also present in abundance in our sides: roasted asparagus and sweet bell peppers.

Eye Health Dinner: Orange glazed salmon with asparagus and roasted sweet bell peppers

 

Makes 2 servings

 

WHAT

 

10 Oz salmon steak

 

2 tbsp orange infused olive oil

 

1/2 orange, cut into slices

 

1/2 lemon, juiced

 

Salt and pepper to taste

 

1/2 of a yellow, red and orange bell pepper, cut vertically (into ribbons if you will)

 

12-15 fresh asparagus spears

 

EVOO (extra virgin olive oil)

 

HOW

 

Preheat oven to 400F.

 

In an oven safe dish, place salmon steak in center and lather with olive oil. Pour lemon juice over the top and season with salt and pepper. Place orange slices over the top.

 

Toss asparagus in EVOO, salt and pepper, set aside.
Place bell peppers on the sides of the salmon as if you’re creating a barricade around it! Spray or toss them with EVOO.

  
Place in center of oven and bake the salmon while the peppers are roasting for about 8-10 minutes if you have a thick salmon steak. Open up the oven and add the asparagus for last 5-7 minutes, until tender.

 

Salmon will be done when flaky. Veggies when sizzling. Should take everything out of oven around 18-20 minutes from when the salmon first goes in, but you’ll be the best judge of that. Enjoy immediately.
