Colorful Yogurt Waffles

     

Sunday Brunch came early! Saturday was amazing because it started Filled with colors! Lots of them! And coffee. We ate breakfast outside because in Oklahoma, there is only a short period of time in which you can eat outdoors without getting eaten by the bugs! And so we did! Healthy. Colorful. Delicious! Hide your food with the colors of the rainbow! Can you spot the waffles?

Oatmeal Yogurt Waffles swallowed by a Fruit Avalanche! 
WHAT
2 cups Rolled Oats

1 banana

1 tsp Baking Soda

2 tbsp Honey or agave 

1/4 cup plain, nonfat Greek Yogurt

1.5 tbsp macadamia Oil 

1/2 tsp Salt

1/2 tsp Cinnamon

1 cup unsweetened Almond Milk

1 Egg and 1 egg white 

1/2 tsp Vanilla Extract

1/4 cup sliced almonds
Toppings: 
Fresh Fruit and maple syrup

 
HOW
Heat waffle iron.
Grind oats in a blender or food processor to the consistency of flour.

Pulse salt, cinnamon, and baking soda into the mixture. To blender, add banana, milk, oil, yogurt and egg. 
Pour into large measuring cup and fold in almond slices.
Spray the waffle iron with coconut oil and pour in batter. This is generally a thick batter which will make great waffles but you can also make them into pancakes.
Cook until the waffle is ready. 
Add chopped fruit of choice and warm maple syrup over the top! Serve to your loves ones. Great for kids! Teach others about colors and the importance of a balanced diet! Love yourself! Enjoy your food!
