Chocolate Chip Oatmeal Banana Yogurt Waffles

Because Weekend!! At our house, that means #BrunchItOnSundays! We always make sure we have an awesome time making something special, usually watching our favorite cooking competition show. Ha! it’s now tradition! Had to share the lightly modified recipe from a couple of weeks ago, still HEALTHY, still delicious and a lot of Fun! PS: Feel free to make these into pancakes!

Banana Oatmeal and Chocolate Chip Yogurt waffles

WHAT

2 cups Rolled Oats
1 banana
1 tsp Baking Soda
2 tbsp Honey or agave
1/4 cup plain, nonfat Greek Yogurt
1.5 tbsp macadamia Oil
1/2 tsp Salt
1/2 tsp Cinnamon
1 cup unsweetened Almond Milk
1 Egg and 1 egg white
1/2 tsp Vanilla Extract
1/4 cup mini unsweetened chocolate chip morsels

Toppings:

Fresh Strawberries
Hazelnut spread

HOW

Heat waffle iron.
Grind oats in a blender or food processor to the consistency of flour.
Pulse salt, cinnamon, and baking soda into the mixture. To blender, add banana, milk, oil, yogurt and egg.

Pour into large measuring cup and fold in chocolate chips.

Spray the waffle iron with coconut oil and pour in batter. This is generally a thick batter which will make great waffles but you can also make them into pancakes.

Cook until the waffle is ready.

Add chopped strawberries and hazelnut spread over the top!
Serve to your loves ones. Great for kids!
