Cheese-less Breakfast pizza was on the menu earlier today! The “kick” of today’s recipe is thanks to using red pepper sauce, which took the place of regular tomato/pizza sauce. Had never done that before and must sayI’m so not sorry for the switch because it was absolutely delicious!
This is super simple and guaranteed to satisfy your belly wishes in under 30 minutes! What I did:
Cheese-less Spicy Breakfast Pizza
2 low carb whole wheat wraps
12 mixed cherry tomatoes, halved
4 tbsp tomato and/or red pepper sauce
2 tbsp fresh cilantro
1/2 avocado, chopped for sprinkling
Salt and pepper to taste
For the cheese lovers: 2 tbsp shredded cheese of choice (I didn’t use it today and didn’t miss it!)
Preheat oven to 350deg.
Lay out wrap sheets and spread tomato or red pepper sauce (or a mix of both, or pizza sauce with added red pepper flakes) all over it. If using cheese, now is the time to sprinkle, along with halved cherry tomatoes next making a circle type pattern for your eggs.
Crack eggs in a small ramekin and transfer slowly to the wrap. This will prevent you from breaking the yolk if you crack it directly on it!
Place in oven for about 10-12 minutes until egg is fully cooked but yolk is still runny and delicious. Sprinkle fresh cilantro and avocado over the top.
